With all the cakes I have made for family and friends over the  years, there was no way I would not do the same for my Ellie girl’s first birthday!  I looked online for inspiration – something that didn’t have flour in it.  Ellie isn’t intolerant to grains, but figure why put it in if I can avoid it.  Got enough inspiration, so got to it. super easy, enough to make one ramekin sized cake for my pup.

She didn’t leave my side the entire time, and got to reap the rewards of licking the spoon and bowl clean!

Added a coconut oil frozen bone for decoration, plus a candle of course, and voila!

Ingredients:

1 egg
3-4 tbsp smooth and natural (no sugar, no salt) peanut butter
~ half an apple (used a red delicious) – not the core
1/2 tsp baking powder

Instructions:

preheat oven (i used a toaster oven this time) to 350F (convectional bake setting)
chop and puree the apple to small chunks
add the peanut butter and the egg, and the baking powder and mix well.
scoop into a baking dish – I used a ramekin.
Bake for 20 mins and test with a toothpick to see if it comes out clean
Let cool before frosting.

Frosting:

3-4 tbsp pumpkin puree (I had a can of this stuff in the cupboards)
2 tbsp of peanut butter

Combine the 2 ingredients together and put in a piping bag or a ziploc bag. put in the fridge to firm up (about 10 mins).  Frost away!
